The recipes in this book aim to be fast, easy, successful and interesting. They have been cooked and adapted over the years for family and friends. The fish used are caught in the waters of the West Country. Nearly all the recipes are cooked in a hot oven. This has a double advantage – the smell does not get out and the fish are cooked very quickly in one dish. Once the dish is in the oven you just have time to pour yourself a glass of wine, take a sip, and hey presto your dinner is ready!
